Pancetta Arrotolata al Pepe Nero is Italian rolled bacon with black pepper made from whole, selected, lean pork bacon. The rind is removed and then the dry salting process begins.
Before tying the salami, the surface is covered with black pepper which gives the bacon a unique flavour and appearance.
It is seasoned following a Romagnol recipe and cured in a cellar for 90 days.
